How to Brew The Perfect Cup
For that perfect cup
Heat as many cups of fresh water as you want to serve of tea in a pot or kettle. In the meanwhile, put the tea leaves in a dry pot, adding 2g or one teaspoon per cup. Bring the water to a high, rolling boil and pour into the teapot. Cover the pot with its lid. Brew the tea for three to four minutes. The leaves will have expanded and opened out, most will have fallen to the bottom. To serve, pour the liquor into a cup through a strainer. The aroma of a good Darjeeling is best enjoyed without milk or sugar but let taste be your guide.

For iced tea

For iced tea, fill a tall glass with ice right to the brim, and sprinkle the ice with some brown sugar in accordance with your taste. Then pour the brewed liquor from the pot, through a strainer, over the ice to make a wonderful soothing glass of iced tea.
